1. Preheat the oven to 220C
  2. Peel the potatoes and slice thinly by hand or with the slicer attachment of a food processor.
  3. Arrange half the potatoes in layers in the dish.
  4. Sprinkle with salt and pepper and pour in half the cream.
  5. Arrange the remaining potatoes in layers and top with salt, pepper and remaining cream Sprinkle with cheese.
  6. Cover with foil and bake for 30 minutes.
  7. Remove foil and cook for a further 30 - 40 minutes until golden and tender.
