Method

  1. Heat the oven to 180C and cook bacon, turning half way through.
  2. Peel the potatoes and steam/boil for 25-30 minutes until soft.
  3. Add a little olive oil to a pan on a low heat along with the sliced onion and cook for 15-20 minutes stirring occasionally.
  4. One the onions are softened and sugar and balsamic to start the caramelisation process. Cook for a further 5-10 minutes stirring occasionally until sticky and caramelised.
  5. Once the bacon is cooked remove from the oven and cool slightly before removing excess fat then cut into strips.
  6. Once the potatoes are softened mash with butter and milk and then add the bacon and caramelised onions. Top with black pepper and serve.

Cooling time is 30 minutes
