Method
- Wash or scrub potatoes
- Place in a saucepan and cover with slightly salted water.
- Bring to boil and reduce the heat slightly and simmer for 18-20 minutes until soft.
- Finely chop the Scallions and add them to a pan with the butter and milk and bring to a simmer for 2 minutes.
- Drain and mash the soft potatoes and then stir in the scallions mix.
- Add black pepper to taste and serve.
Cooking time 25 minutes
