Method

  1. Wash or scrub potatoes
  2. Place in a saucepan and cover with slightly salted water.
  3. Bring to boil and reduce the heat slightly and simmer for 18-20 minutes until soft.
  4. Finely chop the Scallions and add them to a pan with the butter and milk and bring to a simmer for 2 minutes.
  5. Drain and mash the soft potatoes and then stir in the scallions mix.
  6. Add black pepper to taste and serve.

Cooking time 25 minutes
