Method
- Peel potatoes and slice to thickness required.
- Steep in cold water for 30 minutes to remove excess starch.
- Drain well and dry.
- Fry in hot oil 190C/375F for 5 minutes to blanche.
- Remove from the oil and allow to cool for a few minutes.
- Fry in hot oil 190C/375F for 5-7 minutes until golden brown as required.
- Dry well before serving.
Cooking time 20 minutes
