Method

  1. Peel potatoes and slice to thickness required.
  2. Steep in cold water for 30 minutes to remove excess starch.
  3. Drain well and dry.
  4. Fry in hot oil 190C/375F for 5 minutes to blanche.
  5. Remove from the oil and allow to cool for a few minutes.
  6. Fry in hot oil 190C/375F for 5-7 minutes until golden brown as required.
  7. Dry well before serving.

Cooking time 20 minutes
